01 / ABOUT THE PLACE

About this place

The first thing to catch the eye is the broth’s clear golden colour—remarkable for tonkotsu. Ginza Tsukiya’s “clear tonkotsu” keeps the characteristic heaviness and odour in check, while each sip brings a gentle, dashi-like depth of pork flavour. The fine, straight noodles are served with toppings such as spring onions, nori and chashu pork on the side. Start by tasting the broth on its own, then add the toppings gradually to build up the flavours. A squeeze of the accompanying kabosu citrus adds a fresh acidity, bringing the bowl into balance and leaving a light finish.

There is a good choice of rice dishes and small plates to accompany the noodles. Rice topped with a generous piece of mentaiko, or spicy cod roe, is a popular match for the clear pork broth. The menu also includes freshly fried, handmade horse mackerel, refreshing ginger tomato and motsu with dashi vinegar—small plates that can also be enjoyed with drinks. You can choose a meal centred on ramen or a set-course-style meal. Pairing the food with Fukuoka craft beer pale ale, Fukuoka-linked sake such as Mitsui no Kotobuki, or the fragrant Daiyame soda makes for a leisurely meal.

Inside GINZA SIX, the dining room on the 6th floor has the refined, composed feel of a Japanese restaurant. Table service makes for a relaxed meal, whether you’re dining alone at lunchtime, taking a break from shopping or settling in for dinner. It is open from 11:00 to 15:30 for lunch and from 17:00 to 21:30 for dinner—a place to discover another side of tonkotsu.
